Trader Joe's Haul & Easy Recipes
You all know I love Trader Joe’s. I love that it’s small and I can get an entire weeks worth of groceries in 30 minutes or less. Their produce is always fresh and clean, they have a great selection of bread, dips, nuts, and snacks (that are kid approved). Below is everything that I purchased this week. I hope to get 2-3 dinners and a couple of lunches out of everything, and the rest are restocks things that are household staples. I ran out of room in the first photo so the second is just a couple of extra snacks that Harper and Jax picked out - the PB&J bars are also a staple.
Taco Tuesday’s with Trader Joe’s
Ingredients:
Ground Turkey (not pictured). I am very particular about my meat so I typically only purchase from Whole Foods or EarthFare
TJ’s Tortillas
TJ’s Taco Seasoning (1/2 packet)
TJ’s avos
TJ’s vine tomatoes
TJ’s black olives
TJ’s Mexican cheese blend
TJ’s mozzarella cheese
TJ’s diced onions (not pictured)
Buttered Lettuce
Directions:
Sautee 1/2 package of diced onion on avocado oil for 2/3 minutes
Add and brown ground turkey to onions and cook through until no longer pink
Once ground turkey is cooked through add 1/2 packet of seasoning (more if you want extra spice!)
While that is cooking dice up avos and tomatoes
Serve everything on tortillas or lettuce wraps
Top with whatever toppings you want

TJ's Crockpot Chicken Broccoli & Rice Bowl
Directions:
Place onion, brown rice, dijon mustard, garlic powder, salt and pepper in crockpot
Pour in broth and stir everything together until well blended
Add chicken
Cover and book on high for 3 hours. Make sure chicken is cooked through and rice has absorbed all of the broth
Shred chicken
Add broccoli. I like the TJ’s bagged broccoli for this because you want it to be bright green when you add it. TJ’s broccoli can be microwaved in the bag for 3 minutes and it’s perfect.
Stir and enjoy!
Ingredients:
TJ’s diced onions (1/2 package)
1 cup TJ’s brown basmati rice
1 tbsp TJ’s dijon mustard
1 tsp TJ’s garlic powder (obsessed with ALL TJ’s seasonings)
1/2 tsp salt
1/4 tsp black pepper
2 1/2 TJ’s low sodium chicken broth*
2 chicken breasts
1 bag of TJ’s broccoli florets
TJ’s Mexican blend**
TJ’s Shredded mozarella cheese*
* Depending on how long you leave this in your crockpot you may need to add more chicken broth when shredding the chicken/adding broccoli. I typically just dump excess to add moisture
**I used the Mexican blend cheese because i had it leftover from tacos the night before but typically I would use cheddar and a mozzarella combination
This recipe is a life saver and literally the easiest ever. I typically make it on Wednesdays because Harper has dance in the evenings and when we get home I don’t have to worry about making anything - everything is ready to go. It also makes for great leftovers. John and I will typically both eat it for lunch the next day so it’s perfect because it covers two meals that I don’t have to really put too much effort into. It is also easy to tweak - feel free to switch out veggies/add more.
